Position Summary:

Manages and coordinates all food management and preparation activities to ensure the provision of meals to students/persons served that meet approved quality, nutrition, health, and safety regulations and requirements.

Responsibilities

Essential Responsibilities:

  • Manages and coordinates all food management and preparation activities to ensure the provision of meals to students/persons served that meet approved quality, nutrition, health, and safety regulations and requirements.

    • Manages the daily preparation and serving of food to ensure quality, proper handling, and preparation in
      proper quantities in a safe, sanitary, and appetizing manner and to meet the dietary needs of
      students/persons served. Performs inspections of end product to ensure that all foods meet prescribed
      standards for presentation, temperature, and proper portioning;
    • May manage the preparation and serving of food as described above for alternate lunch service;
    • Prepares and implements cyclical menus and food production schedules;
    • Orders and purchases food and food supplies to meet quality, quantity, and special dietary need requirements, working directly with external vendors/suppliers to obtain the highest quality food in a timely manner while operating within approved budgetary guidelines.
    • Maintains an adequate inventory of food and food supplies to best meet needs of the facilities served. Continually evaluates current and potential vendors/suppliers to determine the best and most cost-effective sources of specific food items;
    • Manages and oversees the proper usage, operation, cleaning, sanitizing, storage, and safekeeping of all food, food supplies, food preparation appliances, equipment, and tools, etc., to ensure a safe, secure, and sanitized work environment and promote operational efficiency;
    • In accordance with established program guidelines, manages the federally-subsidized lunch program to ensure an efficient and cost-effective process. Reviews program components, eligibility criteria, and student participation levels on an annual basis and serves as liaison to the Bancroft School and Finance Department regarding all program details and participation;
    • Develops and monitors budgets and sales goals related to food costs. Estimates daily and weekly production and inventory food requirements; coordinates inventory needs with menu forecasts;
    • Establishes and maintains food production records, reports, and department files as required;
    • Manages the implementation of safety training programs and ensures site compliance with OSHA job safety
      requirements.
  • Provides ongoing supervision and oversight to direct reports

Qualifications

Experience: High School diploma or equivalent required with a minimum of five years of hands-on and management experience
in food management and services, preferably within in an institutional or restaurant setting; Bachelor’s degree in
Food Management preferred. Certifications as a Dietary Manager and Chef required with certification as a Food
Practices Professional (CFPP) preferred. Prior supervisory or management experience preferred.
